Pochas are a variety of white beans harvested before maturity, when the natural sugars of the product have been transformed into starch, making it a vegetable. They bear the name of the faded pale color presented by the pods at the time of collection. They are generally grown in the regions of Navarre, La Rioja and Álava during the months of May to September. The harvest is manual and careful, choosing the pods that are at the point of optimum maturity. Pochas have a sweet and creamy flavor, and thery are rich in protein, fiber, minerals and complex carbohydrates.
