Escalivada is a delicious Mediterranean salad of red peppers, onions and aubergines roasted slowly with a vinaigrette made from olive oil and salt. It is a typical dish of Catalonia, Valencia, Murcia and Aragon. Its name comes from the verb "escalivar" which means "to grill" and originates from rural communities. The vegetables are roasted and then left to cool for peeling. Cut into strips and dress with olive oil and salt. Escalivada is a very healthy and nutritious food: eggplant has a mild and slightly bitter taste and is a good source of antioxidant properties, red peppers are sweet and fleshy, rich in vitamin A.
